{ baking } crazy easy pumpkin cookies
November 23, 2010
"Mommy, these are the goodest thing I've ever had!"
~Fidget
Enough said, I think.
Box Cake Pumpkin Cookies
1 15-oz can pumpkin
1 box spice cake mix
(chips or nuts or whatever, if you desire)
(cream cheese frosting, if you're going for extra yum)
I dumped the can and the box contents into my mixer before dropping the batter on cookie sheets. Oven 350, bake 8-15 mins, depending on the size of your dropped cookies. They can't really burn, they just firm up a bit.
Yum, yum, good.
yum and yum!

Did you mix any nuts in the batter itself?

I plan to make an apple pie and pumpkin cookies for tomorrow but I'm not in the mood for getting all the ingredients out, etc...so I'm cheating with the help of this recipe, perfect timing!

@denise: Perfect! You wont be disappointed!
Really, this such an easy and yummy recipe. I love Jades idea of making waffles, too. Pumpkin makes everything so very scrumptious.

@Fashionista:
I added chocolate chips instead, as Fidge has some nut issues. But Id add a 1/2-1/3 cup of finely chopped nuts if you feel like it. Pecans? xo

good lord. I just pulled these out of the oven for tomorrow and we have eaten half already. I sprinkled pecan bits on top. dang. I'm going to have to make another batch.
